‍Sweet Potato Casserole


‍This Thanksgiving side-dish is a great southern tradition. We would either have this sweet potato casserole or just baked sweet potatoes with a little butter.


‍Casserole - Ingredients

‍3 cups mashed sweet potatoes

‍1 cup brown sugar

‍2 eggs, lightly beaten

‍1 teaspoon vanilla

‍1/2 cup milk

‍1/2 cup melted butter

‍ 

‍Topping - Ingredients

‍1/2 cup brown sugar

‍1/3 cup all-purpose flour

‍1/3 cup melted butter

‍1 cup chopped pecans

‍ 

‍Directions

‍Combine first 6 ingredients. Pour into a buttered 1 1/2 to 2-quart casserole dish. Mix topping ingredients together and sprinkle over top. Bake at 350° for 30 to 40 minutes, until hot and browned.


‍Serves 6 to 8. 


‍Baked Sweet Potatoes

‍Wash and dry sweet potatoes. Place on baking pan unwrapped. Bake at 350 degrees for about 1 hour 45 minutes or until potatoes feel soft.

‍Mashed Sweet Potatoes

‍Bake sweet potatoes as above or cook in lightly salted boiling water for about 35 minutes or until fork tender. Cool potatoes. Peel and mash potatoes.
